Pepper (To Taste)

 

Directions:

  1. Saute onion and pepper with olive oil in large pot until onions start to brown.
  2. Add garlic and sauté for one additional minute (until fragrant).
  3. Prepare TVP by: Boil 2 cups of water or vegetable broth. Add TVP and steep for 10 minutes. Strain and fold into onion mixture.
  4. Prepare ketchup, cider vinegar, mustard, brown sugar, and liquid smoke mixture. Whisk and set aside.
  5. Add beans to crock pot.
  6. Stir in ketchup mixture.
  7. Combine all ingredients in crock pot and simmer for about an hour. Cook in crock pot on high setting for three hours.

Background:

We made these for a party to which a couple of vegetarians would be attending. Theo never thought the TVP would taste right. He was pleasantly surprised and the beans were a big hit with both vegetarians and with carnivores. Go figure!
